HERSHEY'S "PERFECTLY CHOCOLATE" Chocolate Cake

Ingredients

  • 2 cups sugar
  • 1-3/4 cups all-purpose flour
  • 3/4 cup HERSHEY'S Cocoa
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • "PERFECTLY CHOCOLATE" CHOCOLATE FROSTING (recipe follows)

Directions

  1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans.

  2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.

  3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost with "PERFECTLY CHOCOLATE" CHOCOLATE FROSTING. 10 to 12 servings.

    VARIATIONS:
    ONE-PAN CAKE: Grease and flour 13x9x2-inch baking pan. Heat oven to 350° F. Pour batter into prepared pan. Bake 35 to 40 minutes. Cool completely. Frost.

    THREE LAYER CAKE: Grease and flour three 8-inch round baking pans. Heat oven to 350°F. Pour batter into prepared pans. Bake 30 to 35 minutes. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost.

    BUNDT CAKE: Grease and flour 12-cup Bundt pan. Heat oven to 350°F. Pour batter into prepared pan. Bake 50 to 55 minutes. Cool 15 minutes; remove from pan to wire rack. Cool completely. Frost.

    CUPCAKES: Line muffin cups (2-1/2 inches in diameter) with paper bake cups. Heat oven to 350°F. Fill cups 2/3 full with batter. Bake 22 to 25 minutes. Cool completely. Frost. About 30 cupcakes.


    "PERFECTLY CHOCOLATE" CHOCOLATE FROSTING

    1/2 cup (1 stick) butter or margarine
    2/3 cup HERSHEY'S Cocoa
    3 cups powdered sugar
    1/3 cup milk
    1 teaspoon vanilla extract

    Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency.
    Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.

This is by far the most requested recipe I make. It is phenomenal! But here's the deal... do not try altering it. It will not work in a 9x13 pan or in two 8" rounds. It must be 9" rounds; if your batter is overflowing then you are not using 9" rounds. It also seems to be better the next day after I have left it sit in a glass covered cake pedestal over night; it seems to get more moist and gooey. I really like how the cake bakes flat and heavy, so I don't have to trim the center off to make an even 2 layer cake.

Overall this recipe is fine, but it is super sweet-the cake and the icing. Also, mine turned out heavy, and sagged, but I made a 3 layer and some changes so maybe that's why. Changes I made: used buttermilk instead of milk and added 1/2 tsp baking soda. Canola oil instead of veggie oil. The cake was very moist and fudgy. Great for true chocolate lovers.

I made this cake for an Oktoberfest celebration and it was delicious. The only thing I would recommend is lining the bottom of the cake pan with parchment paper and then grease it since my one layer stuck to the bottom of the pan. The texture and taste was excellent. My husband and guests complimented me on the cake, so this isn't just a one person review.

I've been using this exact recipe less 1 cup sugar for a few years and it never fails. The combination of the cake and the amazing frosting...heaven! Like another reviewer mentioned, be sure to barely melt the butter to keep the frosting from separating and you'll churn out this fudgy goodness that is hard to beat. Thank you Hershey's!

We are dark chocolate fans, so I used Hershey's Special Dark Cocoa instead for my 10 year old daughter's birthday party. The girls LOVED it! They said it was the best cake they ever had, and wanted me to give their moms the recipe. So, I made it again for my son's birthday and even the adults loved this cake! It's moist and wonderful. I will make this cake again, and I will recommend it to all my chocolate lover friends!

I'm more of a cook than a baker, but this is by far the best and easiest scratch cake I've found. Classic, classic chocolate cake & frosting. TIP: Use good quality REAL vanilla extract. Definitely worth it.

Watch your baking soda and it will be great!!!! Okay, yes, this is by far the best tasting chocolate cake I've come across. However, all these reviews about the cake exploding in the oven, very true. Adjust your baking soda accordingly. When I first made this, I put in the amount of baking soda written in this recipe and the stupid cake was like one of those fourth of July charcoal snakes that just keeps growing and turns your sidewalk black. I changed the baking soda to 1/2 teaspoon instead of 1 1/2, which seems absolutely ridiculously high to me, but I'm at a high altitude and no humidity so 1/2 teaspoon works for me. For those of you with it blowing up in your oven, lower your baking soda and you'll see a difference. You won't regret giving it a second chance

This recipe is making me clean my oven again! The batter was very thin and exploded, literally, in my oven. This recipe, other than the frosting, is far from perfect. Don't recommend.

My Gramma made this when I was a little girl. I have passed the recipe to my daughter and she, I hope will pass it on to her daughter! It was first printed on the can of Hershey cocoa and was called Hot Water Cake, I believe or Hershey's Hot Water Cake. It's the very best, very moist cake I've ever had or made. No need for frosting either, Great just plain!

OH MY GOD!!!! My husband and i devoured this. I used 2 10" round pans and made 4 layers. I made extra icing and put between. It seeped into the layers a little bit overnight and it tasted even better the next day!!! Tip on the icing: use a whisk and stir gently by hand. For some reason when i did the exact same thing with the mixer, it came out too watery. Also, butter should be just melted, and no so hot that it is separating. ENJOY!

This cake is one of the best I've ever made. I do add 3/4 cup oil instead of 1/2 cup to make it more moist, and it is delicious! I have taken it to gatherings of friends and family, and it is always a hit. Rich, moist and chocolatey...my kind of cake!

I followed the directions and put the batter into two standard 9-inch round baking pans, but both pans spilled over in my oven!! I didn't know what to do! I kept baking because the cake looked fine in general and it was for my dad's birthday, but I was afraid the smoke detector would sound or the spilled-over cake would catch fire. Cake turned out to be delicious in the end!

WOW! This cake turned out PERFECT! I LOVE this cake and it is SO easy to make! I even did the frosting, put it in 2 heart cake pans, cooked it like the 3 layer cake! The cake AND the frosting turned out perfect. I even have leftover frosting!

I made this cake in about two hours (incl. cooling time) and it came out perfect. But... I thought I ruined this cake because it shriveled up and felt like a sponge the minute I removed it from the oven. The cake was about to be trash but I was encouraged by a family member to go ahead and ice the cake and bring it to the party. Thank goodness I brought I followed this advice because it tasted awesome and had great consistency. Yum! Yum! Yum! and moist too.

The cake is really delicious... chocolatey without being overpowering and pretty moist. The frosting is to DIE for! Its so rich and chocolatey, except I used double the amount of milk. Recipe calls for 1/3 cup I used about 2/3 or more because although it was good, it was thick, hard to spread, and a little too sugary and grainy. The extra milk yields for a smooth, creamy, and rich frosting you can eat lots of!

This recipe is so reliable--follow the directions EXACTLY. Don't try Splenda, don't adjust anything and it will turn out great. I've used this as my go-to chocolate batter for 9x13 cakes, layer cakes and cupcakes for a couple of years now and still think it is the best recipe when you need chocolate batter.

I have, as the other reviewer said, officially dumped all my other chocolate cake recipes (except for one that was my mom's made with buttermilk that is divine) and my husband said that this is the best chocolate cake I have ever made (except again, for the chocolate buttermilk one). I have to say that not only is this easy - all ingredients dumped in one big bowl, use a hand mixer, add boiling water at end - took me 10 minutes. The cake rose perfectly and stayed up - no falling down. It was springy to the touch and the two layers made a very impressive cake. The frosting is perfect, too. I whipped up some whipping cream to top each slice off - absolute perfection. Glad I found this site and will search for more ideas! I will probably even use this for my July 4th sheet cake and make it in the 9 x 13 pan and use a white buttercream frosting so I can decorate the top in red stripes(raspberries) and blue stars (blueberries)!

This cake has an interesting history at my house! It's the ONLY cake my husband asks for and he's a chocoholic. Well, the first time I made him this cake, he asked me to marry him. The next time I made this cake, I was awoken at 3AM to scary noises in our house. I followed the noise out to the kitchen and I caught my husband IN THE ACT! Stealing a slice of cake and a glass of milk. We've been married for 11 years now and every year, he asks for only this cake on his birthday. He's a lover of chocolate mousse, so this year I'm going to slice each layer in half and fill with the chocolate mousse recipe on this site. I am expecting a piece of jewelry or a cruise vacation after this! LOL

This is my mother's favorite chocolate cake. It is a plus that it is so easy and the ingredients are usually on hand. I made it recently when my daughter's future inlaws came for dinner. Her fiance loves peanut butter so I used Fluffy Peanut Butter Frosting from this wegbsite in between the layers. The cake was fabulous.

This cake is awesome! It's well-written, easy to prepare and foolproof! The frosting literally tastes and has the creamy texture of the chocolate frosting in a tub . . . the cake is super moist. This is the kind of cake that makes every level of cook look good! My husband isn't even a big chocolate person and he LOVED it!!! The recipe is quit literal about the consistency of the batter . . . It is very runny and you literally have to pour it into the cake pan(s). I wouldn't want to try to make cupcakes with it. I checked on mine after baking for about 36-37 minutes. The edges looked a bit darker and "wet", but the toothpick in the center came out clean so I went ahead and took the cake out of the oven. I'm so glad that I did because as it cooled it took on the same appearance as the rest of the cake. When it was cut, the edge pieces were just as soft and moist as the ones in the center. Thanks, Hershey's for helping to make a 42-year-old beginning "scratch baker" look good! :)

I made this recipe in cupcake form for my friends and they all had more than one! By the time I came around to having one they were all gone, so I can't tell you how I liked them. Based on the rave reviews my friends gave me, however, they were a hit. Definitely using this recipe again!

This is my absolutely favorite chocolate cake. It's an easy recipe, very reliable. It keeps very well, too. Last time I made it, I ate the last piece 6 days after I baked it, and it was still great. Usually, though, it never lasts that long. It makes a great layer cake for decorating, but I'm more apt to bake it in a 13X9 pan because it's a great cake to take places. People always rave about it. The perfectly chocolate frosting is great, too.

This is the BEST chocolate cake recipe!! I've never had a cake more moist and rich with chocolate flavor. Delicious! A chocolate lover's dream...Works best for cakes as cupcakes will be so moist they will hardly maintain their shape (still great though). Excellent frosting. I love this cake.

I have used this recipe before and loved it. I tried to make it today and it turned out awful. Instead of rising up, it rose out and all over my oven and my cupcake pan. Maybe it is baking at a different altitude of filling the pan up too much. Oh well. Hopefully it turns out next time.

I followed this cake recipe to the "t" except using wholemeal flour instead of the white. It was amazing, so moist and stayed fresh for a few days. This will be the only chocolate cake I will make from now on, nothing else can compare to this wonderful chocolate cake.

This cake is so easy to make - almost as easy as a box mix. Quick too with things most people already have in the pantry. Delicious flavor. Very moist. I suggest doubling the icing recipe!

I first saw this recipe on Martha Stewart Living and thought it looked quite yummy so I made it and now it is the birthday cake every year for my youngest son. This year my husband requested it for his birthday. It is fabulous. It's rich and moist and there is never any left. I made the frosting recipe that comes with it only once and decided that the canned frosting was just as good without the extra effort, but I have used that recipe for other things because it is very good.

I messed this up. I say I did because I've used similar recipes before and I know it SHOULD work. I thought I went by the recipe except for using 1/2 sugar and 1/2 Splenda. Could that have been what made it turn out flat and gummy? It's possible I measured something else wrong too but I don't know what. It was pretty hectic in my kitchen. I gave it 4 stars because the taste was excellent, just the texture was bad. I will try it again and be more careful to measure and NOT use Splenda. This is the first (and last) time I've ever baked with Splenda.

Good. I made with cake flour, much better texture, almost tortey. Added cup of whipped cream to icing. Made one-layer 12 inch; cooked for 50 min. Can't wait to try with dark chocolate cocoa next time. Maybe add cardamon whipped cream layer.

The "chocolate cake" by far... this is a foolproof cake I ALWAYS make when don't wanna fail; also, it's so easy to prepare, and the ingredients are easy to find: it's moist, chocolatey, rich, and everybody is always asking for more: try it with "leche quemada" filling: simply heavenly!

I baked this cake for some true hard-core chocolate cake lovers. Everyone raved and said that it was the best chocolate cake they had ever had. I did make 50% more icing so I had a super generous layer between the two nine-inch round layers. They think I am a chocolate cake making rockstar with this recipe :) Just don't tell them how easy it was!

This is the cake I had when I was a kid! I don't bake often or well and I refuse to buy cake mix or canned frosting. I love chocolate cake but I've never made a cake by scratch until now. I would just get Sprinkles cupcakes to satisfy my cake craving. Well this is the BEST cake I ever had and the fact that I baked it and it was easy is amazing. I made if for Christmas and everyone loves it. It's moist, delicious and easy just follow the recipe! Now I know where I can get one of the best chocolate cakes ever... from my own kitchen.

This is so fast and easy that I make it often. However, here in Utah at high-altitude you MUST decrease the baking powder and baking soda to just 1/2 tsp each or else the cake will collapse.

Sept. 29, 2009 I'm a year two student at the Sumter County Career Center and I'm taking the Culinary Arts class. Serveral students in my class have tried to impress my teacher with their "baking abilities" but I'm the only one that has won her over and I did it by making this cake. Also, not only did I impress my teacher, I also impress the students as well as the the other facilty and staff. On a regular ol' day, I would just be sitting in class and someone would come to the door begging my teacher to let me make them this cake. It's so easy to make, I just don't see how ANYONE could mess it up. It is so rich and full of flavor.

I love easy recipes, and this was very easy. I made it for a picnic and had at least 5 people ask me for the recipe. I made home-made peanut butter icing instead of the chocolate icing. It was sooo moist and delicious. Highly recommend it.

I've been making this recipe for several years now. I first saw it on the Martha Stewart show, and had to try it out the same day. Its a foolproof, perfect chocolate cake. Its very moist, and the perfect cake consistency. I actually ice it with vanilla icing, as that's what my husband prefers, and its divine!

I get rave reviews everytime I make this cake. When you chill the cake the icing turns into a fudge like consistency. Great with a cold glass of milk. Very easy to make and comes out the same way each time. Love it.

I substituted whole wheat flour for 1/3 of the flour required (adds texture and makes taste a bit more interesting--I now substitute about 1/4 to 1/2 whole wheat flour in just about every recipe I make, from pancakes to chocolate chip cookies). I dumped 12oz of the special dark chocolate chips in the batter. I also increased the amount of frosting by 50%, though slightly reducing the proportion of sugar, and replacing 1/3 of the butter with Neufchatel. The results were great.

This is my family's all-time favorite cake recipe. Often cakes made from scratch can be dry, dense or crumbly but this cake is perfection from it's soft smooth texture to it's "perfectly" chocolate flavor.

This is my favorite cake of all time. I used to bake and decorate wedding and special occassion cakes and this recipe was always a hit! I have tried other chocolate cakes, but none compare to this one. It is quick, easy and very, very delicious! It goes great with a basic buttercream or a peanut butter icing. Enjoy!!!
